Hello. I am effectively coding-illiterate but I'd like to start assembling a knowledge base of science protocols, methods, techniques etc.

I know there are Wiki's, but I've not found one to install onto a private domain that doesn't require a bit of coding expertise.

I don't like the feel of making it in Google Docs as I don't want one giant word document.

GitHub looks clean but with zero coding experience, I've never made much use of it.

I recently stumbled upon GitBook and Docusaurus and they both look interesting in making clean and easy looking knowledge databases.

How different are they from a traditional wiki?

Can GitBook be hosted privately, ever, or will all the data always be on "GitHub's" servers?
