what would work well if the RH was controlled with a sonicator? I imagine that would mean copper or anything else dissolved is going up since it's not really a phase change operation

For an incubator I'm thinking of using a sonicator fogger in a glass jar, with an electronically controlled spigot to keep the water the correct height, to check the water level I think I'm gonna use this method:

looks super simple (using two LEDs and two photodiodes) and is non-invasive so less chance of things getting bio-nastified

The main problem is that equilibration can take several hours; they're really not meant to be used in chambers that are opened repeatedly throughout the day, at least not if there's a large moisture flux with which to contend.

But! Some are particularly convenient. The "DampRid" (comes in half-gallon milk carton thingies) is calcium chloride, and does a good job at sponging up moisture. It can be recycled indefinitely by boiling off the water. Once saturated with water, it evens out at ~32% RH. I recommend putting it in a semi-flexible plastic container; if glass is used, coat the exterior with something like Tool Dip or some sort of silicone rubber. Sometimes the stuff undergoes recrystallization and will shatter the glass container, making a real mess.
