[DIYbio] Acetobacter Aceti

We are currently exploring ways to reduce ethanol in kombucha without having to using distillation, heavy filtering etc.

Kombucha contains acetobacter aceti which converts a lot of the ethanol to acetic acid but to encourage the alcohol to be as low as possible we thought that adding additional acetobacter might be a good option.

Would this be viable? If so, is it possible to purchase acetobacter in some type of powder form?
