I can't answer the question, despite having done some research. I don't think you
need to pay for the license, but you need to register, and be compliant
with the according regulations. In general, compliance, occupational
safety and insurance of the volunteers is pretty high on our agenda.
I can probably tell you quite a lot more about the kraut specifics
in a couple months.
