Thanks Nathan, I was already looking into the cheap sensors, but figured there must be a reason why there are so few. It's incredible how many crappy "fresh air monitors" are being sold.
Anyhow, I'll build a small test setup. Aiming for 5% and see if it works.

Now I am looking to extend the In Vitro Meat part, but I am having some difficulty with the CO2 incubation, but I am not so much an expert on gas flows. Has anyone tried to build one themselves before or know of any build instructions?
