For eukaryotic cells I've used Trypan Blue, I think it should work for non-eukaryotes too:

Basically you'd take a mL of cell culture (may need to dilute if the cell concentrations are high), and add a drop of trypan blue (ideally a known amount), then place this under a hemacytometer and count the ratio of blue to non-blue cells.

You might also be able to use nigrosin or india ink in a negative stain manner.... maybe the burst/dead cells will appear shriveled?
