Sounds like an interesting project. Are you doing heredity testing to try and identify traits that you would like to breed in chicken, or do you have another purpose in mind? To design an experiment you will definitely need a lot of information about the specific genes and the genotypes/phenotypes you want to test. 

The Open PCR machine allows you to amplify the genes of interest, but you also need to have the equipment and reagents for working with DNA samples (i.e. gel electrophoresis tank, enzymes and reagents, DNA stains and markers, etc).

Also keep in mind that for poultry the sex determination is different to humans, so you need to take account the inheritance pattern if the gene is located on the Z or W chromosomes. 

It would be difficult to give specific advice without knowing the exact questions you are trying to answer, but I am sure there are plenty of people who have worked in downstream applications of PCR that can help.
